Carrot Raisin Salad without Mayo
As a kid, I loved the Carrot Raisin Salad that was often served at restaurant buffet lines, as well as in many homes. It was delightful blend of sweet, savory, crunchy, tart & creamy. But, as I grew up, I developed an aversion to the whole idea of mayo. I just could longer stomach the idea of drenching my food in heavy oil & liquid eggs.  I still liked the Carrot-Raisin Salad concept - just not the mayo.

Carrot Raisin Salad is a pretty ubiquitous Classic American recipe. Some people like to add Broken Walnuts, Crushed Pineapple, or Shredded Coconut. Whatever you're used to will work here, too.

Since Carrots are one of those vegetables that are packed with nutrients, and remain affordable in winter, this recipe is great for both your health and your wallet. Seasonal eating at its best!

This is one of those recipes that you just mix till it looks right.

So, here's my version of it. Healthy, satisfying, delicious.

Carrot Raisin Salad
Shredded Carrots (I use a salad shooter - a food processor with a shredding blade or even or a basic grater will also work)
Raisins
Stuffed Veggies' Special Slaw Dressing - enough to moisten - add to taste

Mix together, and enjoy!

  1. We ♥ that salad, although I usually make it with carrots, mayonnaise, a freshly pressed clove of garlic and grated parmesan or asaigo. We have had it with raisins before. I have all the ingredients on hand...and think I will make it today for lunch!!! Thanks for reminding me by sharing this.
